Chicken Tikka Kabobs

Hello there, today I present to you one of my favorites go-to chicken tikka kabobs recipe. Super easy to make and is perfect appetizer for parties. The recipe below is highly customizable, feel free to adjust the spices according to your taste buds.

Chicken Tikka Kabobs

Ingredients
2 Chicken Breast, (each weighing approximately 6-8 oz)
For the marinade:
1/4 Cup Greek Yoghurt
1/2 Teaspoon Cumin Seeds
1/2 Teaspoon Coriander Seeds
1 Teaspoon Ground Turmeric
1 Teaspoon Ginger and Garlic Paste, preferably fresh
1.5 Teaspoons Red Chili Powder
1/2 Teaspoon Sea Salt or to taste
1 Red Onion, cut into wedges
8 Wooden Skewers, soaked in water for at least 15 minutes
Juice of One Lemon
Cilantro for Garnish
Process

  1. Wash the chicken breasts, pat them dry and cut into cubes.
  2. Roast the cumin and coriander seeds on the stove over a flat pan and grind them in a pestle and mortar or a food processor.
  3. In a big bowl, mix yoghurt and all the spices (ground cumin, ground coriander, turmeric, chili powder, salt and ginger garlic paste). Stir well, making sure all the spices are thoroughly combined.
  4. Add the chicken cubes to the marinade making sure that the chicken pieces are properly coated. Cover the bowl with cling wrap and leave in the fridge for at least few hours (preferably over night).
  5. Preheat the oven to 375 deg F. Line a baking sheet with greased aluminium foil.
  6. Thread 2 pieces of chicken and a wedge of onion alternately along each skewer.
  7. Place the skewers on the baking sheet and bake for 15 minutes, flip the skewers and bake for additional 15 minutes.
  8. Set the oven on broil and broil each side for 5 minutes.
  9. Sprinkle lemon juice and chopped cilantro over the kabobs and serve with rice or toasted pita.
