The Antioxidant Salad

Happy Friday Peeps!!
A lot of cooking will be happening in my kitchen today, but for now I present to you the easiest and sassiest of all salads – The Antioxidant Salad. The name says it all, laden with delicious antioxidants like grapefruit, figs and pepita, this salad is a total breeze to make. It takes less than 10 minutes; is light, bright, and bursting with flavors. This salad is an epitome of healthy meals without compromising on deliciousness…. no kidding.

The Antioxidant Salad

Ingredients
1 Grapefruit, peeled, pith removed and sections cut into halves
3-4 Fresh Figs, cut into circles
1 Cup Lettuce or Arugula, chopped
1 Tablespoon Raw and Organic Pepita (pumpkin seeds)
2 Tablespoons Cucumber, chopped – optional
1 Tablespoon Crumbled Feta cheese, optional
Dressing
1 Teaspoon Extra Virgin Olive Oil
1/2 Teaspoon Balsamic Vinegar
Salt and Pepper to Taste

Process

  1. Whisk all the ingredients for the dressing in a mixing bowl.
  2. Add the chopped lettuce to the dressing and toss to coat.
  3. Add the figs, cucumbers and grapefruit halves and toss again.
  4. Transfer the salad to a serving plate and top with pepita, crumbled feta cheese and more grapefruit.
