Crispy Quinoa & Beet Baked Burgers

These quinoa burgers are delicious! Packed with red quinoa, black beans, and flavorful spices, it’s a winning burger for both taste and nutrition.

Red quinoa, black beans and roasted beets, give these burgers the perfect color. Anytime I have leftover cooked quinoa, I make these burgers. They are so versatile and taste great on their own! They can also be served warm over salads,  pitas (falafel style) with creamy sauce and greens or layered into a sandwich. They are a great meatless option that even meat eaters will love. Besides being versatile, they make for great leftovers. The leftovers can be stored  in the refrigerator for up to a week for a quick grab ‘n go meal and they reheat wonderfully in the microwave.

Quinoa Beet Burgers

Ingredients
1/2 Cup Black Beans, rinsed and drained
1/4 Cup Red or White Quinoa, cooked (I cooked mine with garlic, carrots, green peas and mushrooms)
1 Teaspoon All Purpose Flour
1/4 Cup Onion, grated
1 Tablespoon Garlic Powder
1/2 Teaspoons Ground Cumin
1/2 Teaspoon Salt
1/2 Teaspoon Cayenne Pepper
1 Teaspoon Dried Thyme ( or any herb of your choice – Oregano, Rosemary…)
1 Tablespoon Fresh Parsley, chopped
1 Medium Beet
2/3 Cup Goat Cheese or Feta Cheese (optional)

Process

  1. Preheat the oven to 400 F.
  2. Wash the beet and roast it in the oven for 15-20 minutes. Let the beet sit for 15 minutes, until its cool to handle. Peel the beet and chop it finely.
  3. Add all the ingredients to a medium bowl, mix well until all the ingredients are well incorporated.
  4. Form the mixture into patties, about 2 inches in diameter ( I got about 10 patties).
  5. Bake the patties (at 400 F) for 20 minutes, carefully flip, and cook for another 5 minutes.
  6. Remove from the oven and let cool on the baking sheet for 5 minutes.
