Paprika Cumin Shrimp Skewers

Who doesn’t love a great twenty minute meal? Paprika Cumin Shrimp Skewers look complicated but they require no more than twenty minutes and handful of ingredients. If you have marinated the shrimp the night before, you can finish cooking these skewers in less than ten minutes. Score!
You can easily double or triple the recipe to serve a larger crowd. The shrimp taste wonderful over green salad or quinoa. It is a great dish for summer entertaining as you can marinate the shrimp unto a day in advance and all you need to do is to cook/grill the shrimp for 5 minutes… These shrimp skewers are a winner! Give them a try and you’ll know what I mean.

Shrimp Skewer

Ingredients
6 Bamboo Skewers
1 Teaspoon Paprika
½ Teaspoon ground cumin
Salt to taste
2 Cloves Garlic, grated
1 Tablespoon Olive Oil
1 Tablespoon Lemon Juice (half lemon)
1 Pound Large Shrimp, peeled and deveined

Process

  1. Soak the bamboo skewers in water for about 20-30 minutes.
  2. In a medium bowl – mix paprika, cumin, salt, garlic, half tablespoon lemon juice and olive oil together.
  3. Add the shrimp to the mixture and toss to coat. Let the shrimp marinate for at least fifteen minutes. You can also refrigerate and marinate the shrimp overnight.
  4. Add the shrimp on to the soaked skewers. I got around 4-5 shrimps on each skewers.
  5. Heat a lightly oiled grill or a flat pan over medium-high heat and cook the shrimp skewers for about 3 minutes on each side until they are opaque and cooked through.
  6. Add the remaining lemon juice over the shrimp skewered, garnish with cilantro and serve warm.
