Oven Roasted Asparagus

The Oven Roasted Asparagus makes for an elegant and flavorful (green) side dish. The whole process including preparation, requires less than twenty minutes. I used Italian seasoning for flavor, because that’s what I had on hand but I can imagine these being delicious with Cajun Seasoning or some chaat masala. I highly recommend using thick asparagus spears for roasting, to avoid the asparagus being stingy and dry.  Serve these warm or at room temperature along with fish, chicken, veggies or any other main dish. The leftovers can be chopped and added to soups, salads or omelets.

Asparagus

Ingredients
1 Bunch Asparagus Spears, washed and trimmed
1 Tablespoon Olive Oil
1 Teaspoon Italian Seasoning
1 Tablespoon Parmesan Cheese, grated (optional)
1 Teaspoon Garlic Powder
Sea salt and Pepper to Taste

Process

  1. Preheat the oven to 425 F and line a baking sheet with aluminium foil.
  2. In a mixing bowl, add olive oil, garlic powder, seasoning, salt and pepper and mix well. Toss the asparagus into the bowl, making sure its evenly coated.
  3. Arrange the asparagus on the prepared baking sheet, and sprinkle Parmesan cheese on top.
  4. Bake for 12 -15 minutes, until the asparagus is tender.
