Golden Oatmeal with Turmeric and Saffron – Vegan

Turmeric is one of the most predominant spices in Ayurveda. Lately, turmeric is getting much deserved attention and it won’t be an exaggeration to call it new Kale. Although, it’s used widely in Indian cooking, one of my favorite new ways to enjoy this magical spice is in the form of golden milk. Golden milk is well known for plenty of health benefits along with boosting mood, improved metabolism and overall vitality. Today’s recipe is my spin on golden oatmeal, which is made with turmeric, ginger, cinnamon, saffron and other spices. To make golden oatmeal, old fashioned oats (and groats) are cooked with spices, mixed with ghee and topped with goji berries, raisins, and shredded coconut. It makes for the most comforting and nourishing breakfast for a wonderful start to the day. Have a lovely weekend!

Recipe below makes 2 servings
Ingredients
2 Cups Water
3/4 Cup Gluten-Free Rolled Oats
¼ Cup Oat Groats, soaked in water (optional)
½ inch Fresh Ginger, grated
½ inch Fresh Turmeric, grated or ¼ Teaspoon Turmeric Powder
¼ Teaspoon Ground Cinnamon
¼ Teaspoon Ground Green Cardamom
¼ Teaspoon Shilajit Powder, optional
1 Teaspoon Ghee
3-4 Strands Saffron
Toppings: Coconut Flakes, Goji Berries, Mulberries, Pepitas, Sliced Banana, Honey, Raisins, Chopped Dates etc.

Process

  1. Heat water in a medium saucepan and add grated ginger, turmeric and saffron. Bring the mixture to a boil.
  2. Add the oats and groats (drained) to the boiling water and cook on medium heat for 6-8 minutes or until all the water is absorbed.
  3. Turn off the heat, add the remaining spices – cardamom powder, shilajit, cinnamon powder and ghee. Mix well.
  4. Transfer the oatmeal to two serving bowls, top with raisins, dates, honey, banana for sweetness and any additional toppings as desired.
