Dark Chocolate Protein Bark

Friends, if you are like me and don’t like artificial sweeteners or any processed sugar in your food/snack but you love chocolate and all things delicious, I have a super easy post workout snack for you. It doesn’t require any baking and/ cooking and you probably have all the ingredients in your pantry. I used pepitas, coconut chips and hemp hearts but you can also use other mix ins like chopped dates, nuts, etc. I hope you make it and enjoy it as much as I do šŸ™‚

Dark Chocolate Bark

Ingredients

  • 1/2 Cup Puffed Quinoa (not RAW Quinoa)
  • 3-4 Rice Crackers of choice, crushed
  • 1 Tablespoon Peanut Butter
  • 1 Tablespoon Coconut Butter
  • 3 Tablespoons dark Chocolate Chip, I used Hu Gems
  • 1-2 Tablespoons Pepitas
  • 1 Tablespoon Crushed Coconut Flakes, unsweetened
  • 2 Tablespoons Hemp Hearts
  • 1 teaspoon Maple Syrup or Honey, optional

Process

  1. Line an 8″ round or square pan with parchment paper and set aside.
  2. In a small bowl, add chocolate chips, peanut butter and coconut butter and microwave for 15-20 seconds or until the chocolate is completely melted. Melt the chocolate in increments of 5-10 seconds after the first 15 seconds to avoid burning. Set the bowl of melted chocolate aside.
  3. In a medium bowl, add puffed quinoa, crushed rice crackers, pepitas, hemp hearts and coconut chips. Pour melted chocolate in the bowl and use a spatula to mix everything together.
  4. Taste the mixture and add maple syrup/honey if needed for more sweetness.
  5. Place the mixture into lined pan and use the back of a spoon or a smooth bowl to even the surface .
  6. Place the pan in the refrigerator for 2 hours atleast.
  7. Take the bark out ona cutting board, use a sharp knife to cut into strips.
  8. Store the bark in an air tight container in the fridge.
