Cheeku – Cashew Smoothie

Cheeku aka Sapota is one of the most popular tropical fruits in India, Malaysia and Central America. As a child I grew up eating Cheeku almost everyday and when I moved to the US I never saw them, until my recent trip to an international supermarket in NYC, where I found prepackaged Sapota slices. I bought a package and as soon as I had one slice, it reminded me of the fresh ones I used to have at home in India. Cheeku is not only delicious but has AMAZING health benefits. It is an excellent source of dietary fiber, Vitamin C, Calcium, Phosphorus, Iron and is also an antioxidant and anti – inflammatory. The cheeku-cashew smoothie is super simple and is a perfect post workout or breakfast smoothie to revitalize the body by replenishing energy. The recipe below makes one serving, feel free to double the recipe for more servings.
