Broccoli and Cheese Tater Tots

I have never liked Broccoli, not until I had these little guys. The broccoli cheese tots are ADDICTIVE and a healthier version of potato tater tots. You can spice them up with red pepper flakes or cayenne pepper or dip them in Sriracha sauce… choice is yours! Just like me, if you don’t like broccoli… these broccoli tots are totally worth a try and they sure will change your mind.

Broccoli Tater Tots

Ingredients
1 1/2 Cups Broccoli
1 Egg
1/4 Cup Scallions, sliced
1/2 Cup Shredded Cheddar
1 Tablespoon Crumbled Feta Cheese, optional
2 Tablespoons Breadcrumbs
1/2 Teaspoon Ground Black Pepper
1/4 Teaspoon Red Pepper Flakes or Cayenne Pepper, optional
Salt to taste

Process

  1. Preheat the oven to 400°F.
  2. Blanch the broccoli in boiling water for 3-4 minutes, then run under cold tap water. Drain well, making sure no water remains.
  3. Finely chop the blanched broccoli and mix all the ingredients together. Using a tablespoon to measure and your hands to shape, form tater tots and place them on a prepared baking sheet.
  4. Bake for about 10 minutes, turn the sheet half way and bake for additional 8-10 minutes until the tots are golden brown and crispy.
  5. Remove from the oven and serve warm with a sauce of your choice.
