Baked (Crispy) Sweet Potato Fries

They fit perfectly in the guilt free indulgence category and are equally, if not more delicious, and addictive than their fried counterpart. Sweet potatoes are an excellent source of Vitamin A, complex carbohydrates, fiber and proteins.

These sweet potato fries are the father of all snacks, in taste and ease of preparation. To make them, sweet potatoes are cut into sticks, tossed in seasoning with some coconut oil/ghee, baked and seasoned with some sea salt. The end result is crispy, crunch and savory fries that are addictive, and yet so good for health.

Ingredients
1-2 Medium Sweet Potatoes
2 Teaspoon Ghee or Coconut Oil, melted
1 Teaspoon Fresh Rosemary or Thyme, chopped
1 Teaspoon Seasoning of Choice(Paprika/cayenne/cumin/curry powder etc.), optional
Sea Salt to Taste

Process

  1. Peel the potatoes and cut into 1/4 inch sticks. Soak the potatoes in a bowl of cold water for at-least 30 minutes to overnight. Soaking potatoes in water removes excess potato starch and make fries crispy.
  2. Preheat the oven to 425 F. Prepare a large baking sheet with parchment paper and set aside.
  3. Drain the potatoes and remove excess water using paper towel, making sure they are completely dry.
  4. Mix melted coconut oil/ghee along with chopped rosemary and seasoning (if using).
  5. Toss the fries in the mix and spread them on the prepared sheet, in a single layer away from each other.
  6. Bake the fries for 20 minutes, flip and bake for additional 12-15 minutes or until golden brown and crisp on the edges.
  7. Switch off the oven, crack the door open and let the fries cool in there for another 20 minutes or so.
  8. Season the fries with sea salt and serve immediately.
